My vote goes to the 97 series, and I've heard good things about The Golden Arc movies.
Berserk (2016) doesn't exist.
So as title says, I’m a huge fan of the manga and caught up, would love to show my gf berserk she doesn’t read manga or anything like that, but i know all the anime’s for berserk are incomplete. Would just love to show her something as I keep talking about the manga and want her to experience some of it

I suggest starting with this one. Both animation and story coverage are great (at least as an introduction).

97's series is great, but if she's not into manga or anything like that I guess she wouldn't be very satisfied with the animation.
a bit late but i wanted to add on this.
for context: i read the manga before watching any of the shows/movies. have also read it about 3 times.
for entertainment's sake, you should probably show her the movies or the show alternate (of the movies) first. they cut out a lot of scenes/dialogue (more cuts added to the show), but the animation and direction makes it a lot more of an easier watch than the 1997 version.
while the '97 version is highly rated and also has scene/character cuts (no puck 😪), it's just a bit too slow for me personally. and with the older animation, i could only really make it 6 episodes in with my friend before we decided to end it.
the 2016 version is a sequel to the movies, so i wouldn't touch that unless she wants to continue (and still does not want to read it). it gets a lot of slack, but it's genuinely not that bad. the biggest flaws being the horrific cgi, slightly faster pacing, and 1-2 original scenes. other than that, it stays fairly true to the manga. some scenes being almost word for word exact.
