    Although Zaraki has the title of Kenpachi, he didn't have the strength to back it up. Unohana was the one responsible for sealing Kenpachi's powers because if she hadn't fought him, Zaraki wouldn't have unconsciously held back his powers in search of a great battle. Unohana lost in their first battle and she knew that Zaraki was the one worthy of the title Kenpachi. It's said that there can only be 1 Kenpachi at a time because there can only be 1 strongest, there can't be 2 strongest otherwise it's not the strongest. It's Unohana's responsibility to make Zaraki worthy of his title of the strongest because it's her fault that Zaraki isn't as strong as he should be

Right now the soul society was in a rush to train the soul reapers so they decided that it was more important to have a strong kenpachi than to have a weak kenpachi and unohana. And if kenpachi fought someone as strong as unohana, he would die before removing his limit

It's kind of like something only Unohana can do. His memories of fighting are with her. He needs to get over his standard (Unohana was his standard) and he needs to understand that he must keep getting stronger.

I think your missing the point, Unohana and Kenpachi wouldn't have the battle any other way. The end of the battle is what Unohana wanted as it was the only way to awaken Kenpachi's power. Yes they could have had both but Unohana wanted to fight Kenpachi until she couldn't anymore.
