Keep in mind that the anime is like 5 times faster than reading the light novel so conversations not central to the plot are cut out completely.
I think the anime leaves us to assume Sakura is in Ayanokouji's back pocket and their relationship isn't changing. And it moves on to Ayanokouji finding his next bitc--female follower, Karuizawa.
In the light novel she's not that important to the plot, being there but not making the story progress (except those 3-4 episodes in season 1). Since the adaptation is going full speed mode they'll probably cut the development of most characters ; by removing appearances of characters like Sakura and speeding the dev of more important characters such as Karuizawa or Horikita
Because they cut every single interaction she's supposed to have with Koji, like on the boat. No time for that sadly
