Well, anime was in production first, there's no specific moment where manga diverges, but there are overall small differences here and there, especially in characters depiction, their motivations are slightly different, so are their relationships. Ikari Gendo, for example, is a very 1-side evil guy in manga, compared to his anime counterpart. One particular character appears earlier, some scenes from anime are cut in the manga, yet some other moments especially with Kaji and Kaworu are added. The plot of Ep 17-18 also ends up differently in manga. Last chapters of manga also show events of "End of Evangelion", but a bit differently with finale being its' own thing.

I felt while reading the manga that there are many scenes that are carry more weight here than in the anime and the same thing goes for the anime. I think it's valid to experience both, it kinda feels like one completes the other.

Read the Wiki, I guess? Or you could just consume both to really experience the difference. I think the anime is better anyway, so I recommend starting there.

First of all you used the word manga twice in this sentence when I am sure you meant to type anime.

Secondly the Neon Genesis Evangalion manga is an adaptation of the anime so I don't think it really matter which version you start with I am guessing. You could just start with the anime since it's the original or you could read manga adaptation.
