In my opinion, watching it in chronological order isn't the best experience. Especially if you hop from one show to another. It breaks the narrative and structure the anime follows. You keep switching from one cast of characters to another, with both series being actually very different in tone and other stuff.
But if that's how you like it I have nothing against it. If that is how you watch it, then yeah, you should wait for Railgun T to finish. On the other hand, Railgun isn't necessary for Index. It doesn't matter if you watch it now or in the future. It is adapting the manga and focuses on Mikoto, and that does not impact the story of Index.
It's up to you, but if you watch Index III now, you aren't gonna spoil Railgun for yourself and vice versa.

I mean I know how one isn't necessary for the other but honestly so far I enjoy Railgun more than Index so I want to see everything more from that perspective rather than the other but if they don't cross each other like they did in Railgun S I might as well just continue watching Index. I did just skip Accelerator Nectar arc exactly for that reason.
