Watch FMA Brotherhood, it adapts the manga quite faithfully AFAIK

Fullmetal Alchemist : Brotherhood is one of the best anime ever made but it has a problem. The first 9 episodes are quite fast paced because it was already covered in FMA 2003.
You could always watch the entirety of brotherhood but if you want an alternative Id recommend watching the first 10 episodes of FMA 2003 and switching to episode 6 of fmab after that. Brotherhood is totally fine and is top tier ofc.

For me it's easier to watch 64 episodes than read 27 volumes.

From what I've heard neither anime series fully adapt the manga well (Brotherhood supposedly rushes through the first 8 episodes or so and the 2003 series completely diverges from the manga halfway through). So I guess it would be best to read the manga.

And I'll die on the hill that 2003 is miles better than the 2009 adaptation, more tonally consistent and making something more ambitious out of the source material. even arakawa herself liked it and wished she could've thought of what they did.
since my reply to you got already like this I'll also say that the manga is a fine read, but the anime adaptations elevate it a lot. its not like arakawa is some amazing artist that can draw some jaw breaking spread panels.

tbh i droped the anime after the dog scene if you seen it you know what i mean but then i got the manga box set and enjoyed it all it being one of my favorite mangas

each anime is different take as the manga wasnt complete and pumping out fillers aint a good way to run a show so '03 ( the one i prefer) diverged and made a pretty good story on its own which gets hate for no reason.
If youre gonna watch the anime, watch '03 first
feel free to pickup the manga whenever you wish.
